Ingredients
- 2 Tablespoons butter
- 1 small white onion diced
- 2 Quart(s) cheddar cheese
- 2 Pint(s) clam juice
- 2 Pound(s) crawfish tails
- 1 Tablespoon(s) garlic powder
- 3 Pint(s) heavy cream
- 1 Tablespoon(s) nutmeg
- 1 Tablespoon(s) white pepper
- 1 Quart(s) your favorite beer
Method
- Sautee onions in butter in large stock pot
- Add 2 lbs. crawfish tails and sauté
- Add heavy cream and clam juice then stir
- Add cheddar cheese and bring to a boil
- Add nutmeg, white pepper, garlic powder, and cayenne pepper (to taste)
- Add 1 qt of your favorite beer and simmer for 30 minutes
