Ingredients
- 1⁄2 Stick(s) butter
- 1 Cup(s) grated cheddar cheese
- 1 Bunch(es) green onions
- 1 Pound(s) Louisiana Crawfish Tail Meat
- 1 Bunch(es) parsley
- 1 Pound(s) Velveeta cheese, cubed
Method
- Bake potatoes in oven
- Remove from oven and let cool
- Sauté crawfish, parsley, and green onion in butter until tender
- Season to taste
- Reduce heat and add Velveeta cheese
- Remove from heat when cheese is melted
- Scoop out potato and add to crawfish mixture folding all ingredients together
- Spoon mixture back into potato skins and sprinkle with grated cheddar cheese
- Bake until hot and cheese is melted
